In the heart of the Mayan Jungle of Belize is an oasis of refinement and decadence. A place where culinary boundaries and creativity are stretched and guests come to feel spoiled.  A walk up the cobbled path to the resort’s open air lounge instantly relaxes you and transports you to a time and place where attention to details and exceptional customer service is a way of life. Belize’s hip urban chic jungle resort is located on the historic Pan American Highway, often refered to as the Old Northern Highway.  Maruba’s restaurant has been consistently ranked as the best dining experience by its guests.


Since its inception in 1986 and rebirth in May 2010, Maruba’s cuisine has been a mixture of local organic ingredients with an international flair.  Maruba’s speciality breads, fruit based vinaigrettes, noodles and a mango peppersauce are all made at the resort.  Maruba’s cuisine can be best described as a fusion of “East of Paris meets the Jungle”.  Our culinary mission is to create the ultimate dining experience.  We cater to vegetarians and vegans.  Our menu is thoughtfully created, prepared for healthy lifestyle and made to order.  Ingredients are thoughtfully selected and created by the guidance of owner and chef Merickston Nicholson, with the precise execution our local Belizeans chefs.  Although guests may order a la carte, most choose the Marubian dinner, a three course special which is design daily to capitalize on the freshest market ingredients, a new recipe or chef’s inspiration.

 

Breakfast and lunch is served in the open aired Garden Patio or Jungle Tree House accompanied by the beautiful songs of residing birds and an occasional visit from a Humming bird getting its regular intake of nectar from the red hibiscus flowers. With a menu at the discretion of the chef, made to order and modified to individual dietary needs, guests are treated to an indulgent experience of letting themselves be taken care of.

“Every single person who served and assisted us during our stay did so with the utmost professionalism. As someone who has eaten in many fine dining establishments throughout the country, their food and service hands down exceeded some of the top restaraunts in the United States.
